Homemade Healthier "Coconut Chocolate" Bars (Just Like A Childhood Favorite)-No Bake



  Mounds bars were always a favorite growing up.....just loved the coconut/dark, non-milk chocolate combo.... but when Mama Bear turned "all naturale" and educated herself, she quickly (well and a lot took years to learn ha) learned of all the crap- soy, corn syrup (probably gmo), artificial flavors and preservatives etc- Umm no thank you! So homemade it is!! (which always tastes better anyway) Something I found interesting too, is once I cut out all the crap I used to eat, then the time or two I actually tried it again down the road, It's like I could taste the chemicals y'all. Gross. Taste buds were "trained" to the new, healthy, good stuff 👅😉

 Here's the recipe for the yummy Homemade Coconut Chocolate Bars 🍫

1 cup unsweetened organic shredded coconut (like this brand)
3 tbsp pure maple syrup/5 drops liquid stevia (always test sweetness yourself)
2 tbsp coconut oil
1/2 tsp vanilla extract
1/8 tsp sea salt (don't est salt like I did at first ha, ain't nobody wants their Coconut Choc bars salty haha!)
1/2 cup chocolate chips ( I use allergy friendly Enjoy Life here- 6 pack best deal OR unsweetened like this great brand then add more Stevia to taste)
1 tsp coconut oil (optional, can add to chocolate when melting to make smoother)


Put first five ingredients together in a food processor and blend well. Line a plate with parchment paper (I use this healthier unbleached kind). Then form the blended concoction into patties with your hands, put them on the paper, freeze till firm.
While they're firming up, start melting your chocolate chips on low, add in that tsp of oil if want (makes for a smoother and better coating it seems).
Dip patties into the melted chocolate, back on parchment paper, and re-freeze till firm.
Leftovers are best in fridge/freezer!
