Yummy Paleo Chocolate Chip Cookies- Gluten, Egg, Dairy, Soy, Tree Nut Free!


  Sometimes we just need a chocolate chip cookie.....or five....for crying out loud! 🍪😜 but when you have food sensitivities and/or allergies, it's not always that easy ugh...plus this Mama wants the ingredients to be healthier ones!

  Besides that I choose not to use dairy or gluten, it's also because myself and my four year old son (15 month old hasn't been tested yet) showed pretty sensitive to them both on a Food Sensitivity Test (recommend MyMedLab.com where you can do it from the comfort of your home-just a finger poke!) and also he showed somewhat allergic to the protein in cow's milk.

  So this Mama is always on the hunt to find Allergy friendly recipes (also major egg sensitivities wahh) and I recently have learned of Tigernuts/flour which is neither a nut or a tiger haha 😂 This stuff goes way back thousands of years. They have a slight sweetness to them too which makes it great for baking. They're rich in Fiber, vitamins E and C and have Magnesium, Potassium etc.

  I stumbled upon a chocolate chip cookie recipe using Tigernut flour and Tapioca flour/starch, and it was good, but I actually tweaked it some and really liked how they turned out this time!! I feel like they're the perfect chewy/doughy chocolate chip cookie I've been missing. My son and I may or may not have eaten them all in one and a half days hehe. 😋

Paleo Chocolate Chip Cookies- Free of Gluten, Egg, Dairy, Soy, Tree Nuts!

1 cup Tigernut Flour (I use this one)
1/4 cup Tapioca Starch (I use this one)
1/8 cup Raw Honey + added 5 drops liquid Stevia (I use this Stevia and love it)
1/3 cup organic pure/no sugar Applesauce
1 tbsp dry Gelatin (I use this brand currently)
1/8 tsp Baking Soda (I use this aluminum free one)
1/8 tsp Sea Salt
1/2 tsp Vanilla Extract
3-4 tbsp Enjoy Life Allergen Free mini chocolate chips (I buy the 6 pack of them-best deal!)

*Can substitute pure maple syrup for the honey. If using no stevia, then probably 1/4 cup maple syrup.
*Can substitute 1/3 cup coconut oil for the applesauce.

I personally threw it all in a food processor mixing well (except the chocolate chips) next stir in the chips and lastly make into balls ( I pressed down some) and put on an oiled cookie sheet or use one of these silicone liners (I love and easy clean up!)
Makes about 8-9 cookies.
I put it on 'Convection Bake' at 375 for about 9-10 min (check on them, you'll see that slight browning and then should be perfect)
Remove from oven and let cool so don't break apart although they stay together pretty good.
Store in fridge or double, triple or quadruple the recipe and store in the freezer! 😀




  Now if it's your thing, get your glass of iced cold milk, whether it's Organic Dairy, or Plant Based (what I use) such as Almond, Oat, Hemp (my fav!) or Coconut, Dunk it and Enjoy!! I bet you can't just eat one....
